Single Pan Breakfast

1 # Bacon - sliced into bite-size pieces
1 lge. Onion - diced
½ lge. Green Pepper - diced
3-15oz. Cans of sliced white potatoes - drained
8 Eggs
Cheese - chunks or grated (we use Velveeta chunks because they melt easily)

In a large dutch oven fry bacon until done to your preference. Drain off as much of the bacon fat as possible and add diced onion and peppers. Fry with bacon until tender and add the potatoes. The potatoes just need to heat through. Lightly beat the eggs and add to bacon and potatoes. Stir carefully until the eggs are cooked and add the cheese. Allow a few minutes for the cheese to melt. Serves four hungry people.

Some people like to top this breakfast with hot pepper salt (Lawry’s), hot sauce or ketchup.
   

Granola

Makes about 4 cups

Ingredients:
1 cup rolled oats
1 cup rolled whole wheat
1/2 cup grated coconut
1/3 cup wheat germ
1/3 cup nuts (almonds, cashews, or peanuts)
1/3 cup sunflower kernels
7 teaspoons sesame seeds
5 tablespoons honey
5 tablespoons vegetable oil
1 teaspoon vanilla extract

Procedure:
Mix dry ingredients in a bowl. Mix and heat honey, oil, and vanilla extract in a pan, then stir into dry ingredients, Spread the mixture on a shallow pan and bake for 25 minutes at 325 degrees.
